Tasting

Purple with a dark cherry-coloured rim, dense viscosity. Ample aroma spectrum displaying black heart cherries, cool elderberry stew, chocolate streusel, bark of oak, black pepper, sun-ripened blackberries, cedars, notes of blackthorn, vaguely perceptible hints of juniper. Dry, powerfully structured with substantial smooth tannins which seem as if covered with cherry chocolate. Characteristic and inviting. Very substantial, lavishly displayed.  Animating fruit sweetness supported by “Rust minerality”, dressed up with a fiery temperament. Long finish with a promising ageing potential.

Pairing

Together with a slice of roast beef and a little side dish, any type of goose (smoked goose breast, goose salami, roasted goose), roasted calf with thyme sauce, escalope of wild pork crusted with pepper, manchego with olive oil and nut bread. Companion in decisive conception phases – from dusk till dawn …

Making

Hand-picked into small boxes at the end of September 2007 from the single vineyards Plachen (loess brown earth) and Pandkräftn as well as Umriss (deep loess on loamy chalk subsoil).

Destemming, mash fermentation in closed stainless steel tanks at a temperature of approximately 31˚C for 14 days followed by five additional days of maceration, gentle pressing, malolactic  fermentation and maturation in 300 l oak barrels ( approx. 60% new). Blending and final maturation in large wood casks.
