Tasting

Purple with a dark cherry-red rim, dense tears. Charming aroma spectrum of black cherries, sour cherry cake, chocolate chips, touch of vanilla, sun-ripened blackberries, rosewood slightly toasted, juniper and blackthorn faintly perceptible. Dry, powerfully structured, with substantial yet smooth tannins which appear as if dipped into cherry-chocolate. Characteristic and inviting. These muscles habve been training thoughout a long autumn 2006. Animating fruit sweetness yet supported by “Rust minerality”, framed by a vivacious glow. Long finish with a promising ageing potential.

Pairing

Every type of goose dish (goose potage, goose terrine, roast goose), rolled roast veal with marjoram jus, tournedos of wild boar crusted with black pepper, pecorino with olive oil and nut bread, companion in decisive conceptual phases, in the evening and so on.

Making

Manually harvested into small boxes end of September 2006 from the single vineyards PLACHEN (loess brown earth) and PANDKRÄFTEN (deep loess on loamy chalk subsoil).

Destemming, mash fermentation in closed stainless steel tanks at a temperature of approx. 31˚C for 12 days followed by 5 additional days of maceration, gentle pressing, malolactic fermentation and maturation in 300l oak barrels (ca. 55% new). Marriage and final maturation in large wood casks.
