Straw-yellow and brilliant. White elderflower, definitely mineral, red and yellow bell pepper, grapefruit; an animating tropical orchard. Dry with delicate fruit acidity and a remarkable creamy texture and density. Gooseberry, maracuja, red currant and pomelo. Smelling of an early summer pick nick on a flower field! Complex, persistent, well structured and animating. A compact, characteristic Sauvignon blanc showing a nice potential. Also beautiful when served in large glasses. Well suited for long “distances” – serious. Chef`s darling. Multi-layered Sauvignon blanc do without wood.

Pairing

To start with before the great Blaufränkisch vertical or even afterwards. Salad with young spinach, pignoli and fried yellow pepper, stinging nettle soup with honey pockets. Greengages wrapped with bacon, ham with Balsamico pears, fish dishes such as salmon with cooked celery, Tartare of goat cheese with leek and goose berries. Avocado with all kinds of asparagus. To wait for Gordot or the main course.

Making

Hand-picked in four runs throughout September into new small boxes.

De-stemming, 5 hours of maceration, temperature-controlled fermentation for 2 months in stainless steel tanks at a temperature of 19 º C.
