Tasting

The core is a rich ruby-garnet with an intense cherry-red hue; pronounced legs. The bouquet is intensive with aromas berry jam with exotic spices, with nuances of fine cedar, cinnamon, figs, blackberries and cassis. On the palate it is luscious and full bodied, with silky tannins, and seductive flavours of chocolate and dark cherries, rounded off with a long, warming finish.

Pairing

Anything cooked on a barbeque, grilled vegetables with spicy sauces, barbecued kebabs and spare ribs marinated in a honey-chilli dip, Cajun Chicken, hot tortillas, lentils….

Making

Harvest by hand at the end of September 2003 in small boxes. The 60% proportion primarily came from the Ried Öden; the 40% Cabernet from the Gillesberg and Ritter (both slate-based) vineyards.The grapes were de-stemmed and the alcoholic fermentation took place in sealed tanks at 31° C. The wine was left to settle for several days, followed by gentle pressing and malo-lactic fermentation. The young wine was matured in small second and third-use oak barrels.
