Couscous Salad without Couscous

  • 1 small cauliflower without green parts
  • 1 scallion peeled
  • 2 cloves of garlic peeled
  • 1 small raw cucumber
  • 1 tomato finely diced without juice
  • ½ yellow bell pepper deseeded and finey diced
  • 1 bunch of parsley minced
  • 3-4 sprigs of fresh mint minced
  • 1 small lemon
  • salt
  • ground pepper
  • 1/8 l top-quality olive oil
  1. Grind the cauliflower with a grater and remove larger parts.
  2. Cut the cucumber and scallion snto Julienne spaghetti with a Julienne cutter.
  3. Press garlic and mix with all the other ingredients.
  4. Add the juice of 1/2 a lemon, mix thouroughly, season to taste and allow to rest.
  5. Garnish with herbs and serve.

Tip: don´t reveal what the white ingredient is and surprise your guests.
