Semolina Schmarren (pancake broken up with a fork after frying)

4 Servings

A “fast” main course serving ca. 3 portions which we like when we feel like sweets!

  1. Beat milk, eggs, semolina and salt and let rest for ½ hour.
  2. Melt butter in a pan in the oven. Pour batter into the melted butter, break up with two forks into pieces after two minutes, turn over several times using a spatula, let steam off. We like it “crisp”–requiring one hour of baking time at 200˚C.

Serve with a glass of milk or fruit stew (apple, quince, peach, plums etc….) and sprinkle with plenty of sugar.
