Tasting

Magnificent ruby with a cherry-coloured rim, medium viscosity, smells of red and blue flowers, berry confit, inviting nose, a hint of stewed sour cherries, a touch of sage and liquorice, chocolate covered blue berries perceptible. Dry, catchy tannin and smooth body, on the palate increasingly dark olives and garrigue, does totally without new wood, highly inviting fundamental quality. 

Pairing

Goose stew with extra pepper, rabbit with braised tomatoes and black olives, sage-/veal involtini with mashed celery, woked vegetables with soja sauce and may be cured beef tongue, with classical game lights – finely cut of course, amatriciana, parmigiana and teryaki from the japanese restaurant, toasted bread with tapenade, finely-spiced companion for a proper sixty-six game, or to hide some news behind the counter… 

Making

Harvested at the end of September 2020 manually from several Syrah plots.
Destemming, closed mash fermentation in stainless steal tanks with spraying of the mash hat over a period of 10 days followed by 3 additional days of maceration. Gentle pressing, malolactic fermentation in the tank, maturation in large, used oak barrels (2.500 l).
