Notable purple of a somewhat darker kind, subtle violet rim, powerful viscosity. Distinct fragrance on the nose which leaves no doubt about the supremacy of this Blaufränkisch wine. Ethereal appeal. Wild cherry extravaganza, piment, black tea, zests and cinnamon bark complemented by ripe mandarins and fresh roasted nuts, fine barrel selection. Dry, densely layered, continuously displaying spicy fruitiness, characteristic and multi-dimensional, slightly smokey with cloves and cardamom, laurel, juniper - roasted. Clearly mineral type and pulpy, enormously long finish. Mirrors the assets of the winery´s oldest Blaufränkisch vineyards in a perfect way.

Pairing

With Scarmoza gratinated Brussel sprouts, even with mettwurst, dark roasted pieces of cabbage with smoked almond pesto. „Waldviertler“dumplings wrapped in Strudel and fried in goose lard, Regina´s delicious „ basic gravy“ to match ox tail, a medium-rare steak directly from the producer and double-cut – together with a Bouquet salad. Accompanying hard cheese – 4 torque style. Kummelweck filled with pepper salami, with roasted venison liver sausage, chocolate – black pudding pizza, instead of surf to turf. Roast wild boar – from top to tail. And to treat yourself on otherwise boring days. To believe in the good in man.

Making

Manually into small boxes, from the single vineyard Plachen where we own the only two totally chalk-free Blaufränkisch parcels – loam on weathered silicate, practically no need for selection, end of September 2017 with perfect parameters of ripeness and perfect Pannonian weather.

Destemming, mash fermentation in closed stainless-steel tanks at a temperature of approximately 30 °C (88 °F) for 14 days, followed by 4 more days of maceration, gentle pressing and maturation in 300 l barrels (approximately 30% new).
Serving temperature 15-17 °C (58-62 °F), decanter and large, high glass – in this order
