Tasting

Clear, brilliant pink-rosé, violet lilac blossoms. Inviting like the pink district in the Land of Cockaigne. Sweet peach and crisp bananas, some lemon and a hint of fresh mint. Semi-sweet, backed by a harmonious acidity. Elegant creamy texture with fragile fruit sweetness. Raspberries flirt with freshly diced Alexander pears. The tiny, vivacious rosé fairies dance on the palate until the bottle is empty. With less residual sugar than in previous years the very serious basic grape material can show off.

Pairing

Pheasant with pomegranate and pink pepper, exotic sticks of pineapple & Cajun chicken, soup of beetroot, salmon and all that can be conjured of it. Sheep cheese with nectarine chutney, nashi-pignoli salad. With pepper/strawberry sorbet. To accompany a nice gossip – better, "exchange of experiences" or simply to enjoy! Explicitly for those who wouldn`t order a wine at all.

Making

Hand-picked end of september, in three runs together with the grapes for the Blaufränkisch Reserve 10. Hand picked into small boxes.

De-stemming into red wine tanks, after 6 hours racking off the juice (ca. 12%). Temperature-controlled fermentation in stainless steel tanks for a period of four weeks. Interruption of fermentation by separation of the must from the lees and cooling. Resulting in a natural residual sugar content.
