We have cultivated the Tannat grape variety since 1998. Through our traditionally close ties with the Laimburg Research Centre for Agriculture and Forestry in South Tyrol, we were introduced to this renowned and fascinating variety among others. The now fully mature vines are planted on Gillesberg – our monopole vineyard site.
Tannat ripens comparatively late, similar to Cabernet, and is the only variety in our winery pruned to short spurs in order to counterbalance its considerable yield potential. It will definitely play an important role in the future.
Clearly identifiable as a red wine: dense purple with an inviting sour-cherry rim and pronounced tears – even cascades – in the glass. A multi-layered, profound nose with singed rosemary, red pepper, lavender, fully ripe blackberries from Vogelsang, a hint of tar and the faintest touch of liquorice, alongside chilled lingonberries and green tobacco. With a little air, the aromas gain even more momentum.
Dry, with impetuous depth, both despite and because of its remarkable ripeness. The grape variety’s inherent tannic grip is mouth-filling and powerful. Mulberry snacks by the campfire, cedary strength, yet always juicy, fleshy and rich in extract. A true blind-tasting wine – even for the hardened tasters.
Blood sausage pizza with thyme pesto, pressed sausage from cured beef tongue with black olive tapenade, rabbit skewers with ratatouille, raclette with rosemary bread, dark mushroom soup with hearty pink pepper, wild boar shank with blackberry jus, cedarwood-smoked fjord salmon topped with liquorice, homemade duck nuggets with spicy patatas bravas sauce, Tyrolean liver “Christmas Edition”, crackling bread with roasted onion butter. Another bacon snack? Or perhaps a steak snack? Or maybe a bacon-wrapped steak snack?
Harvested by hand in small crates at the beginning of October 2024, destemmed, spontaneous closed-mash fermentation with frequent pump-overs, gentle pressing, malolactic fermentation, aged in repeatedly used 300 l barrels with absolutely no influence from new oak.
