Tasting

Intensive purple, multi-layered spicy basic structure, ripe heart cherries, fresh plums, stewed sour cherries, ethereal pepper flavors, black berries and subtle tobacco notes, behind that, with air, also delicate rosehip puree. Dry, full-bodied, densely structured, finely knit tannins, again the whole cherry-pepper complex, fine spicy aftertaste, juicy finish, elegant powerhouse with definite ageing potential.

Pairing

Confit duck shanks, 13-month Montafon mountain cheese with peppery apricot chutney, glazed calf's liver with pommes duchesses and thyme juice, forest rye bread with ham and cranberry butter, lamb + bay leaf + charcoal grill! Caper sauce with some rib eye medium to rare, spicy chorizo pizza with shavings of 82% Valrhona. Actually, there shouldn't be a dry eye in the house.

Making

Harvested in late September 2019 from the Mitterkräftn site - chalky brown soil with clay.
Destemming, closed maceration for 18 days, gentle pressing, malolactic fermentation in used 300-liter French oak barrels.
Serving temperature 15–17 °C (58-62 °F) preferably with experienced decanting
