Intense purple with a black core. Wonderful viscosity. A cool-fruity still life on the nose: fresh, black olives, chopped thyme, laurel, intense fragrance of violet, some ground cilantro, smoked bacon, black pepper, liquorice. The entire list not really dogmatic and, in any case, incomplete. Hints of noble oak. Dry, very smooth tannins and fine varietal characteristics, always juicy, yet not wandering off to a cake-type. Almost ethereal notes with a dark overall appearance. Densely packed and finely nervous, very long, at the beginning of a great career.
Barbecue lamb leg without bone, wild pheasant with bacon cabbage, stewed venison with juniper and olives, all varieties of steak with a considerable amount of pepper, Pecorino matured in caves, herb pasta with lentil sugo and smoked almonds with olive oil, truffle dishes and so on
